Philadelphians will forever disagree over who makes the best cheesesteak. But there is one thing no can dispute – Pat Olivieri invented the steak sandwich in 1930, and the cheesesteak soon after. Pat’s is the Original, the King, and the gold standard by which every other cheesesteak is measured. It is the sacred temple and holy shrine of the Philadelphia cheesesteak. Pat’s or Geno’s? That debate will rage on into eternity. Pat’s is Krusty the Clown. Geno’s is Sideshow Bob. Pat’s is numero uno, Geno’s is Sonny Bono, Baba Louie, and Garfunkel.
Go any time of day or night, and there is almost always a line. But it moves fast. Pat’s has the system down. You order a steak, blink your eyes, and there it is, waiting for you at the next window like a long-lost friend.
